Albert Rothman currently is the Vice President of Food & Beverage at EOS Investors where he oversees all F&B strategy, development, design, and operations of over 30 hotels and resorts.  

Prior to this, Albert oversaw food & beverage for AJ Capital Partners in Chicago, including The Soho House Chicago, Thompson Hotels in Chicago & Nashville, The Chicago Athletic Association, Pontchartrain Hotel, and the Graduate Hotel portfolio. At AJ Capital Partners Albert worked with culinary titans such as Tartine Manufactory, Pizzeria Bianco, The BOCA Group, One Off Hospitality, and Land and Sea Dept. The portfolio included everything from a Michelin starred restaurant (Nico Osteria) and James Beard Award recipient (The Cherry Circle Room), to funky coffee shops across fifteen university-anchored towns.

Prior to AJ Capital Partners, Albert oversaw food & beverage in hotels in New York, Los Angeles, Boston, Naples, Islamorada, Marathon and Key West for Northwood Hospitality.

In the early portion of his career, Albert oversaw food and beverage operations at Viceroy Hotels & Resorts flagship property in Abu Dhabi, Viceroy Anguilla, Montage Beverly Hills, the Four Seasons Beverly Wilshire, the Peninsula Beverly Hills, and the Thompson Hotel in New York. While in Los Angeles, he ventured into the independent restaurant world by developing the concept, opening and operating Wood & Vine, a 145-seat farm-to-table restaurant and bar in Hollywood, California.

Albert earned a degree in Business Logistics from Pennsylvania State University, as well as a Master’s Certificate in Food & Beverage Management from the Cornell University School of Hotel Administration.
